Usually Wednesdays are reserved for interesting libations perfect to get you in the mood for the upcoming weekend but I once your day gets started the weekend again seems so far away and come Friday you’ve forgotten the drink….or atleast this is what happens to me so I’m making a slight change. Enter Wedding Wednesdays and to kick off this new category here’s a DIY that would make for an amazing party favor for your guests.
With wedding season in full swing now, the rush to find that perfect wedding favor that stands out from every other tradition is on. Being a huge fan of edible favors, the combination in this jelly offers up a unique mix of modern and eclectic making it perfect for a slew of different wedding styles. My cousin, in fact, is planning to tie the knot next year in August. She is going for a garden themed wedding with lavender and lilac touches so I can’t wait to share this with her. Enough gushing though, check out the steps below and happy crafting!!
Makes 3 cups
1 1/2 cup water
¼ cup dried lavender flowers
2 tablespoons fresh squeezed lemon juice
3 ½ tablespoons powdered apple pectin
2 cups sugar
¼ cup elderflower syrup
1 bunch dried lavender sprigs
Now Do This
In a small saucepan over high heat bring water just to a boil. Remove from heat and stir in lavender flowers. Let steep for 20 minutes. After 20 minutes, strain mixture into a medium saucepan, discarding the lavender flowers. Stir in lemon juice and pectin until pectin is completely dissolved.
Over high heat, bring the mixture to a boil, add sugar and elderflower syrup. When the mixture returns to a rolling boil, let boil for 3 minutes, stirring occasionally.
After boiling, transfer jelly mixture into small jars. Let set for 5 minutes. Once jelly has started to firm up, carefully insert lavender sprigs into jelly for a decorative finish. Set aside to cool and cover.
