This morning I’m giving granola brands a double middle finger and opting to eat my own concoction instead of their rather expensive options. Enter a good Google search and the eventually my homemade Vanilla Cranberry & Coconut Granola. Plus a few extra bucks in my pocket every week.
Vanilla Cranberry & Coconut Granola
- 7 cups of Oats
- 1 cup of Flaxseed
- 1 – 2 cups of Brown Sugar
- 1/4 cup of Cinnamon
- 3/4 cup of Canola Oil
- 1 cup of Honey
- 1 1/2 cups of Craisins
- 2 cups of Shredded Coconut
- 4 tbsp of Vanilla
In a large bowl mix together your oats, flaxseed, brown sugar, cinnamon and Craisins then put aside. Putting the oven on at 300 degrees, take two large baking sheets and line with foil.
Next pour your Canola oil, honey and vanilla into a small sauce pan and heat on medium heat. Watch this stuff carefully because as it boils, the honey will create a sort of foam that could boil over creating a pretty awful mess. Let the mixture boil for about 2 minutes or atleast until the foaming begins then remove from heat.
Once the foam had died down, mix the liquid with the dry mix ensuring a good coating.
Spray your foil lined pans with baking spray to keep everything from sticking and then evenly spread out your mixture on the two pans then place in the oven.
After about 15 minutes check on the granola. I stirred the granola around a bit just to make sure everything was heating evenly then I added the coconut and a bit more cinnamon(this is optional depending on everyone’s personal taste). Put everything back into the oven for another 10-15 minutes and check again. If you like the crispiness of the mix take it out for good and let sit until its cool then store it away in a cute container or Ziploc bag. Have it with your greek yogurt or milk for breakfast or copy us and sneak it into a movie for a snack instead of popcorn.
This recipe yielded about 2 boxes of Kashi granola and considering I already had everything in the house except the craisins, cost very little to make in comparison. Add to that the house smelling like sweet cinnamon for the whole day and my hubby declaring it tasted better than what we buy to everyone, I mean its a win win all around.
